Vegan MOFO: My Top 5 Vegan Breakfasts

Whenever I go out for brunch with my friends, I get looks full of pity and sympathy as they chow down on their eggs benedict while I smile and swallow my hash browns and toast.

“You don’t understand,” I explain, “I eat so well at home!” They smile and nod politely but I can tell it’s hard for them to imagine what I’m eating for breakfast without eggs, sausage, and creamy coffees. Well, this time I have photographic proof and I’m sharing my top 5 vegan breakfasts with you!

5. Hangover Hash


I LOVE this dish. It’s so easy and so satisfying on a particularly challenging Saturday morning. Chop up some potatoes and fry them up in olive oil. When they’re about 5 mins away from being done, add whatever you want. It’s crazy! You literally can add anything you have in the fridge and it will taste amazing. Here are some of my favorite things to add:

  • Avocado
  • Fresh corn
  • Tomatoes
  • Chives, Green Onions, or Fresh Herbs
  • Spinach
  • Broccoli
  • Vegan sausage

Then serve with hot sauce or ketchup!

4. Breakfast Burrito


Most vegans will make scrambled tofu from time to time but if you really want to get crazy, serve the scrambled tofu in a wrap with hot sauce, guacamole, beans, tomatoes, or even some Hangover Hash!

Scrambled Tofu

  • Fry up some chopped white onion in olive oil (and garlic if you’re feeling wild)
  • Add firm tofu but squeeze it through your hands to get that ‘egg’ look
  • Add 1-3 tbsp veganaise depending on your taste
  • Add 1 tbsp Tumeric for the yellow colour & a dash of salt and pepper
  • The rest is up to you! I like fresh tomatoes, green onions, chili powder, fresh herbs, or corn

Hint: Sometimes the final product can be a little liquid-y from the tofu, veganiase, tomatoes or whatever so I often strain mine before putting it in the wrap.

3. Fancy Toast


This might be cheating since it’s sort of a fancy sandwich without a top piece of bread but I refuse to abide by your meal rules! If you stick with Tofutti or another vegan cream cheese as a base then I believe that you are staying within the breakfast world of foods. One of my favorite fancy toasts is:

  • ½ Ciabatta Bread Bun (toasted)
  • Tofutti
  • Fresh Tomatoes
  • Fresh Basil
  • Pecans
  • Arugula

Another favorite is to top the vegan cream cheese with salted avocados and pine nuts. Either is served best with a soy latte.

2. Martha’s Potato Leek Pancake Thing


So I am straight up ripping the mighty M off here with this one. You can find the recipe for this one here, but it’s basically like a big delicious hash brown. But the beautiful thing about this is you really can play around with a lot of veggies instead of potatoes and leeks, like yams, cauliflower, or even beets!

1. Fruity Pancakes


Oh yes. I made these recently and they were ‘punch yourself in the face’ delicious. I like this really easy and simple recipe for pancakes. I then added some grilled tree-ripe peaches and pineapple. The coconut whip was ridiculously easy too:

Coconut Whip

  • Scoop out the firm part of 2 cans of coconut milk (full fat)
  • Mix with ½ cup maple syrup & 2 tbsp brown sugar

Now my fellow vegans, forget heading out to brunch and requesting toast without butter. It’s time to cook a vegan breakfast for your friends!
