My name is Carrie Forrest and I am the author of Carrie on Vegan, a cooking blog that showcases whole-foods, plant-based recipes. I use my blog to chronicle my adventures in cooking and feature vegan recipes that are simple to prepare and 100% delicious.
I wasn’t always as healthy as I am now. I grew up eating SAD (Standard American Diet) food and felt the consequences in early adulthood as I gained weight and developed anxiety issues, migraines and allergies. It wasn’t until I saw the movie “Super Size Me” that I even thought about how I was fueling my body. After that, I decided to pursue a second career in nutrition and wellness and I began the journey to health that I chronicle on my blog.
Typically, I post original recipes that I develop and test in my home kitchen. I make my recipes printable for easy access and file them in my “Recipes” tab as well. One of the unique aspects of my blog is that I often use a step-by-step photo guide when describing my recipes. For all of the visual learners out there (including me!), I find this method an approachable way to understand how the recipe gets made.
I try to select recipes that are simple to prepare and use everyday ingredients. Some recent posts on Carrie on Vegan include Baked Quinoa Burgers with Peach Salsa, Raw Mini Carrot Cakes and Homemade Vegan Fudgesicles.
After going vegan in 2010, I have experienced a personal transformation in my health, successfully resolving my health disorders simply by following a whole foods, plant-based diet. My mission in life is to use my training to help educate (and inspire!) people about vegan nutrition and how it can transform their lives as well.
Carrie Forrest is a graduate student in nutrition, a dietitian-in-training and the author of the blog Carrie on Vegan. Through her writings, step-by-step photo guides and recipes, Carrie inspires readers to prepare plant-based recipes that are 100% delicious. Carrie firmly believes that superior health is achievable through nutritional excellence and specializes in whole-food, simple recipes that are low in added fats, sugars and salt.

Weekend Blog Reads: Don’t Fear the Vegan
Do you like this story?
Have you ever put all your energy into creating something in the kitchen for guests, only to have them turn their nose up the moment they learn it’s vegan? I (Steffi DeRobertis) have encountered this on many occasions; people will reject vegan food without tasting it based on the (mistaken) belief that “if it’s vegan it must taste bad”. At first I took this reaction poorly, then I turned it into a challenge. Could I create vegan dishes that appeal to people who are scared of a vegetable-based diet? Could I help omnivores to learn to not fear the vegan?
If the reaction of our daughter’s friends to the vegan sweets she shares is any indication, the answer is yes. Open their minds young!
I wish I could say that I never liked food made with animal products, but that wouldn’t be true. Both my husband and I were raised meat eaters so we had an idea of what our carnivorous friends might be looking for in vegan food. When I hear somebody say, “I could never go vegan/vegetarian because I couldn’t live without _____”, I view that as a dare. I have always loved creating new recipes and I began to research recipes from our past, looking for ‘comfort food’ I could veganfy.
This focus on recreation started me down the path of making my own seitans. Just because we are vegan doesn’t mean we should be denied the pleasure of eating Reubens, gyros, tacos or BLTs (without guilt.) While I initially created my blog, Don’t Fear the Vegan as an outlet for my recipes and to engage myself in the global vegan community, it will be evolving into a platform to promote the DFV line of seitans, which we will be bringing to market in the near future. It is our family’s hope that the blog and our line of seitan will inspire people to start down the path of veganism.
The best part of blog has been the chance to become part of the worldwide community of vegans and the opportunity to explore the great and inspiring things people are doing in the movement. We at Don’t Fear The Vegan are all about community and love to share information. The only way to grow veganism is by sharing.
Oh, I’ll take this opportunity for a bit of vegan outreach! Our pictures suck… If there are any budding vegan photographers in Seattle, we’ll trade food for photos!
**The DeRobertis family is a typical family; Steffi works full time while Phillip is the home schooling dad of their daughter Anzia. They are now taking their years of experience in the music industry and food retail to create a new way of promoting their soon-to-be vegan food line. Without the efforts of all three, Don’t Fear the Vegan would not exist.
** Weekend Blog Reads is a weekly column where we feature great vegan blogs to help spread the word about people doing great things for the vegan movement. Do you have a vegan blog to share? Email editor@veganmainstream.com.
