Ever wondered how to answer that question, ‘Where do you get your protein?’ Vegan MOFO vlogger Tara Chernoff may just have the perfect response! In this vlog she demonstrates how to make a delicious Quinoa Salad. And while she’s doing the demonstration, you’re going to learn a lot about the interesting history of this power packed food.
Quinoa Salad
2 cups water
1 cup quinoa
2 roma tomatoes, diced
1 cup shredded spinach
½ cup finely chopped onion
2 tbsp lemon juice
2 tbsp olive oil
½ tsp salt
1-2 avocadoes, diced
Combine water and quinoa; bring to a boil. Reduce heat, cover and simmer for 15 minutes, or until liquid is gone. Spread to cool.
Mix lemon juice, olive oil and salt, and drizzle over tomatoes, spinach, and onion – add to cooled quinoa.
Just before serving add avocado.
