Scrambled Tofu
- 3 green onions, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 green pepper, chopped
- 1/2 red pepper, chopped
- 1 cup mushrooms, sliced
- 1/2 cup broccoli, cut into small florets
- 2 cloves garlic, minced
- 14 oz. extra-firm tofu, drained, crumbled or cubed
- 1 tsp curry powder
- 1/4 tsp turmeric
- 1/8 tsp crushed red pepper flakes
- 1/4 cup vegetable broth
- 1/2 tsp salt
- 1 Tablespoon nutritional yeast
- pepper to taste
Heat a non-stick pan on medium-high heat. Add the green onions, cherry tomatoes, chopped peppers and mushrooms. Cook until they begin to soften, about 2 minutes. Add the garlic and cook another minute until mushrooms have darkened in color. Stir in the tofu and sprinkle it with the curry powder, turmeric and crushed red pepper flakes. Add the vegetable broth and broccoli florets. Cook on medium-high heat, turning gently with a spatula until the liquid has evaporated. Stir in salt, nutritional yeast and pepper to taste.
