Vegan MOFO: Kale is King [video]

Have you ever wondered what to do with kale – or why you should eat it? In this vlog #2, for Vegan MOFO, guest contributor Tara Chernoff talks about why kale is so good for you and tips for cooking and preparing it. She also demonstrates a quick and easy – and SUPER healthy steamed kale recipe. Oooh, you can almost feel the goodness coursing through your body!

Sauteed Kale

  • 1 bunch kale
  • 2 cloves garlic, minced
  • 1 – 2 tsp ginger, minced
  • 2 Tbsp tamari or say sauce

Remove kale leaves from stems, wash the leaves and then rip them into bite-sized pieces. Add the pieces to a frying pan in which you have sauteed garlic and ginger in a little water. Add tamari or say sauce and continue cooking until the kale is a bright green. Remove from heat and serve.

For the past twelve years, Tara Chernoff and her husband have raised their three boys on a vegetarian diet. Over the past six months they have transitioned their family to a vegan diet and are discovering new and delicious recipes that Tara is excited to share with other families. Tara is particularly interested in the relationship between food, the environment and our health and recently received her certificate in Plant Based Nutrition from ECornell University.
