
Breakfast is the most important meal of the day – isn’t that what all those wise people say? Quinoa is packed with protein and lots of great nutrients, like magnesium, calcium, fiber, manganese and more – and it’s super easy to make! For days when you have lots to accomplish, try out this fabulous quinoa recipe – it will give you tonnes of energy, and lots of great nutrients too!
Strawberry & Walnut Quinoa
- 1/2 cup quinoa, rinsed well
- 1 cup water
- 1/2 tsp cinnamon
- 1/4 cup fresh or thawed frozen strawberries
- 1/4 cup walnuts
- 1/4 cup almond milk
Directions: After rinsing quinoa (and do this well to remove saponins), transfer to a saucepan. Stir in water and cinnamon. Bring to a boil. Reduce heat, simmer for 15 minutes, or until water is absorbed. Add strawberries and walnuts and serve with almond milk.
*Note: if you prefer other fruit/nuts, add them instead – or just to switch things up. You can serve quinoa this way in place of oatmeal; other extras might include: flax seeds, hemp hearts, apple, pear, blueberries, raspberries, banana, chia seeds, slivered almonds, maple syrup.
